Healthy Peanut Butter Oatmeal Cookies
2 Ripe Bananas, Mashed
1/3 c. Organic Crunchy Peanut Butter
2/3 c. Unsweetened Apple sauce
1 tbsp. Vanilla
1/2 tbsp. Salt
1/2 tbsp. Cinnamon
1 1/2 c. quick or Old Fashioned Oats
1/4 c. Nuts (I used Pecans dried.)
1/4 c. Semi Sweet Potato Chocolate
1/4 c. Shredded Coconut
» Preheat the oven to 350 degrees. Mix the bananas, peanut butter, applesauce, and vanilla. Add the oats, nuts, chocolate chips, and coconut; stir until well mixed.
» Round Spoon 2 tbsp. from a mixture of cake onto a non-stick baking sheet, leaving two between each and flatten it a little inch or. I put some chocolate chips on top of each cookie. Bake for 15-20 minutes and allow to cool slightly.
Coconut oil Chocolate Fudge
1 cup coconut oil, melted
coconut milk 1/3 cup
1/3 cup cocoa or cocoa powder
1/3 cup honey
2 teaspoons vanilla extract
» Combine all ingredients in a bowl and stir until smooth and well mixed.
» Pour into lined bread pan 8x4.
» Refrigerate overnight.
Baked Pears with honey and walnuts
2 large ripe pears
1/4 TSP ground cinnamon
Honey 2 tsp
1/4 cup crushed walnuts
» Preheat the oven to 350 ° f. cut the PEAR in half and place on a baking sheet I cut a piece off the other end so they sit upright. Using a spoon, remove the seeds.
